How do I determine what channel amp I need?

The number of channels you need is determined by the number of channels your stereo receiver has. If you have a two channel receiver, then you only need a two channel amp. The channel rating on an amp tells you the number of individual signals it can amplify.

It should be rated at or close to the speaker rating, but never exceed the speaker rating. For example, a speaker rated at 30 watts should not be connected to a 10 watt amp, as there will be problems, but also never connect it to a 80 watt amp. There should be at most 20 watt difference from the speaker.

Depends on what kind of audio you are referring to. home audio it is how many speakers you would like to power individually. 5.1 is 5 speakers 2 fronts, 2 rears, and a center channel. 7.1 has all of 5.1 but also has 2 satellite speakers. mobile audio is different.

The Amp should be rated at or near the speaker rating. DO NOT exceed the speaker rating. If a speaker is rated at 50 Watts, do not connect it to... say... a 100 watt amp. but, also, do not connect it to an amp rated at 10 watts. this amp may have a hard time driving it. Other considerations.
