Shell the pecans and discard any discolored pecans. Place the pecans in freezer-proof plastic bags and store in the freezer for up to a year. Defrost by leaving at room temperature for a few minutes.

You may freeze your fresh, shelled, pecans by first wrapping them in plastic freezer bags that you have sealed to keep out moisture. They will store well for about 2 years this way and can be opened and refrozed easily with no harm to pecans.

Pecanss till in the shell can keep for up to six months if kept in a dry, cool place. Shelled pecans keep in a freezer for two years.

I always store nuts of any kind in my freezer. They stay perfectly good for a very long time--even years. They don't even seem frozen when you use them.
