Salmon in itself is a healthy food. The skin could be eaten however it does contain more fat then the meat itself. The meat is better than the skin of the salmon.

The skin is both good and bad for you, but the benefits far outweigh the risks. The skin is a little high in cholesterol, but it is also very high in Omega 3 oils, vitamins A&C, calcium, and iron. Make sure you scale it though, scales are not good.

Salmon skin contains 'omega 3 fatty acids', the good oils that help your body to fight against cancer and heart disease. However, the fat of the salmon is just under its' skin where any mercury and/or PCB's that have been absorbed through the skin, will be concentrated in the fat. Remove fat prior to skin consumption.

Salmon skin can be both good and bad for you. While it contains healthy Omega 3 fatty acids, it can also contain toxins if the fish was in contaminated waters.

Salmon skin is edible and it contains Omega-3 fatty acids which helps to fight against cancer and heart disease. However their oil does not contain "good cholesterol" which is good for the body. Salmon skin is a good source of saturated fats helps to to increase production of cholesterol and LDL.
