How much of leek do you use?

While the white part is probably the best, I will cut up into the green as far as it will hold together. You could use the entire thing, but I prefer the lower portion.

The entire leek is edible. Each portion of the leek has a different taste. The white portion is milder and taste and is generally prefered.

I think this is a matter of personal taste. I find leek to be slightly cloying, but other people may love it. I prefer onions or scallions. If you are using an untried recipe, I would suggest following the directions, and make adjustments to the recipe the next time that you make this recipe.

I typically cut off the root and most of the green. I probably use about an inch up from where it starts to turn green. But I might be wasting too much.

The leek is a member of the onion family so it depends on the recipe.It's not as hot as an onion but it does have a strong flavor.
