I just got off a crash diet - what can I do to eat but not gain weight?

I do not want to gain any weight back.

Maintaining a weight is as much about burning calories as it is taking them in. Exercise and eat healthy, getting no more than 30% of your calories from fat, preferably unsaturated, 30% from carbohydrates, and 40% from protein. Go for 1200-1400 calories per day split into 3-5 mini-meals.

You have to keep exercising and slowly add food back in. Moderation is important. Staying really active and keeping carbs down helps.

Crash diets are not a good thing for your body. If you don't want to gain the weight back you are going to need to continue eating healthy and exercising properly. It is okay to eat foods that are not exactly healthy but only in moderation. Don't starve yourself. You will want to eat more.

You should eat frequent small meals that are high in fiber, protein and whole grains. You should also exercise regularly. Aerobics will burn calories. Strength training will strengthen your muscles. Some of the weight may come back initially, but a healthy lifestyle will help you continue to lose weight.

Eat vegetables, you will gain some weight because the crash diet caused you to lose calories and carbs as well as water from your body. Your body needs natural nutrients from certain foods, you need sugars and you need protein.

You can do nothing. You haved starved your body and it will add weight. The only solution is to avoid doing crash diets at all.
