If I breed a Seal Point cat will I get a Chocolate Point?

Cat breeding can produce numerous different colors in each litter. If there is Chocolate Point coloring somewhere in the background of your Seal Point, then some of the kittens might turn out to be Chocolate.

I really can't find information on this, but based on standard breeding practices, I know that you can't determine an outcome without extensive and genetically dangerous in-breeding. You should consult the Siamese breed registries to determine proper breeding practices, and how to best breed for certain traits.
