Donk cars are, more often than not, older cars that have been what they call "pimped out." These are cars that are customized. Such customization could be, but not limited to, bigger and more fancy rims than the stock ones that come with the car, better stereo system, intricate interior work, etc.

Donks are heavily customized Chevrolet Impalas, specifically the 1971 to 1976 models. This name came about because for some reason people think the logo looks like a donkey.

They are earlier model Impala. Donk is just a shorten version for donkey. For some reason people thought the Imapala logo resembled a donkey. Typically they are modified car with only visual customizations like huge wheels, paint, and interiors. Most also have upgraded stereo systems.

Donk cars are basically cars that are pimped out. The cars come in many different models and are usually custom maid.
