A Great Project is the natural dye project. Collect things that are naturally used to dye fabric such as blueberries and tea to show how different colored clothes are made.

One good idea would be to grow mold. Put a piece of bread in a jar and watch the mold grow and multiply right before your eyes. Should be simple. Even for a 5 year old. Another good idea would be to make a replica of a volcano and have it "erupt" with a mixture of baking soda and vinegar.

Begin with a hypothesis that can be tested. For instance, plants need water and sunlight. Test this by setting up an experiment. Place one plant in the sun and give it water. Give one plant only sun another only water and yet another neither. Take photos and make notes about your observations. Analyze the data and present your conclusions.

A good project is a project the student can understand well enough to take simple measurements and interpret them. For instance, "which brand of paper towel works best? " Have the student measure water, dump it on a counter, and then count how many paper towels it takes to clean up.

A volcano is a classic project. You can grow sugar crystals in a glass. Germinate a seed/bean on the inner inside of a clear plastic cup for viewing.

I've seen some good projects done with static electricity that is pretty fun for kids. Or an experiment to answer why the sky is blue (to understand properties of light). Or why leaves are green (to understand plant pigmentation processes). Start with a simple question.
