What difference will it make if I make cream puffs with baking powder vs. baking soda?

You can substitute baking powder for soda, but you may need a little more. Both are leavening agents (which means they are used to make things rise). Baking powder has a more neutral taste (soda is more acidic), so the flavor may be slightly different.

Very little difference, but you will need about twice as much baking powder to the amount of baking soda. Baking soda is bicarbonate of soda, which releases carbon dioxide to leaven the pastry, leaving sodium carbonate. Baking powder is a mixture of baking soda with other chemicals that neutralise the leftover sodium carbonate to give a smoother taste.

Cream puffs are made with water, butter, flour, salt, and eggs. Neither baking powder or baking soda is needed in the recipe.

Baking powder is not as strong as Baking soda, so you will need a bigger amount of it. If you use baking soda try to mix it with the flour, sour cream or vinegar prior to mixing it with everything else.
