What do you do when you see an endangered animal that is eating an endangered plant?

That depends on the animal. If it's an animal I can chase away from the plant, I do so. If I cannot, I let the animal eat the plant, because it's easier to clone plant matter than it is to clone animals.

I don't think you should do anything. The animal cannot help that one of its food sources is an endangered plant. If anything, the fact that both the animal and the plant are endangered should encourage you to promote the plant's cultivation.
