Normally they'll roll into a ball if they feel like they're going to get eaten. They have a hard shell to protect them. Sometimes they'll stand their ground.

If the armadillo doesn't try and run off then it will try to pull it's tail into it's body. Secondly the armadillo will turn its shell into a ball as it's shell is basically a shield to ward off predators, or keep whatever has scared it or after it from eating him.

When an armadillo is alarmed it often tries to protect itself by rolling into a tight little ball and biting its tail so that it can't be unrolled. In this way it takes advantage of its hard outer skin, while protecting its vulnerable underbelly. Armadillos have also been known to jump when startled.
