Lactose is the sugar in the milk and does not break down by boiling it. Lactase (an enzyme produced in the small intestine) breaks down the lactose from the milk.

Lactose in milk is not decomposed to any oher product on continued boiing. The simple heating of lactose solution will make only concentrated solution of lactose . Thus the milk will become sweeter on continued boiling. Lactose is much less sweet than sucrose.
