You can substitute regular milk with the addition of either plain white vinegar or lemon juice. The ratio required is 1 cup (less 1 tablespoon) of milk to 1 tablespoon of vinegar or lemon juice. It is important to leave this mixture aside for at least five minutes to allow it to thicken.

The best to substitute for buttermilk would be either powdered milk or regular milk. The reason being is the buttermilk has specific properties that are unique and necessary to the recipe, which are hard to duplicate. Powdered milk and regular milk are the best because they have most similar qualities.

You can use soy milk in place of buttermilk for most recipes. Be careful to choose the type of soy milk carefully. Plain, unsweetened soy milk is the best option for savory recipes. You can use sweetened and flavored soy milks for sweets, and these can enhance or modify the flavor of the final product.

I usually use regular milk and vinegar. The vinegar makes it sour. Another trick is to use sourcream. Sometimes you have to thin the sourcream down with a little milk. These tricks usually do the trick, sometimes it taste better than using buttermilk. It doesn't hurt to experiment in the kitchen.
