What is the science of cooking vegetables?

I would like to know the science behind the cooking.

Overcooking takes away all the nutrients and vitamins off vegetables. It is better to wash and cut vegetables rather than cut and wash them. Also steaming vegetables is healthier than deep frying or cooking at very high temperatures.

I cook vegetables on the stove, in a pan with little water on low. Don't cover the vegetables with water they will lose all their nutrients. Cook until tender.

It is the same as any other food. Heat cause the vegetable cells break down causing them to soften up.

When you cook veggies, cellulose breaks down because hydrogen bonds break apart in plant cell walls. They then become softer and chewy.
