Restricting the intake of food for a certain period of time before a blood test is recommended because the nutrients contained in certain foods can alter your blood test. For instance, a milkshake or a bacon sandwich can increase your sugar or fat levels and produce an incorrect result.

Eating will falsely elevate the serum cholesterol levels in your blood. Thus, fasting will ensure that the levels of cholesterol in your body are accurate.
