Why does my Jindo have thyroid problems?

Thryoid problems are common in many breeds of dogs. Its a congential defect (a birth defect). The only thing that can cause spontaneous thyroid problems is radiation so its just something you have to deal with.

Some dogs just have abnormal thyroid levels. Some have overactive thyroids, some underactive. This can be managed fairly easily with medication.

Thyroid problems in dogs are caused mainly by the dogs own immune system attacking and killing cells of the thyroid gland. It's called hypothyroidism.

I would ask the groomer what sort of shampoo was used and if any dips were done. I'd also ask if the groomer is seeing any other dogs with issues or had any skin problem dogs there that day. If grooming equipment was not properly cleaned and disinfected between dogs its possible a skin infection was transferred.
