Newer cars have thermostats that operate the fans even after the ignition has been shut off. The purpose of to continue to help the motor to cool down. Once the temperature reached the set point, they shut off, normally within a minute or two.

Because the motor is overheated and needs to be cooled down even after the engine is turned off. It may come off shortly after turning the engine or run for a few minutes until the temperature is lowered.

Well, I know that in my Porsche 911 Carrera the fan will run to slowly cool down the engine to the proper temperature, depending on how you drive your car

A car fan should keep running after being turned off mainly so that the engine can cool off. However, sometimes certain cars are equipped in air pump systems that help to get the engine cool off.
